Since moving toward a grain-free diet, one of the things I have missed most is tortillas! Our family has always enjoyed enchiladas, quesadillas and most of all #TacoTuesdays (Although tacos are not limited to just Tuesdays around here!) It has been a challenge to find a grain free tortilla that can stand up and hold together but these homemade cassava tortillas are up for the challenge.

Otto’s Naturals Cassava Flour is made with 100% cassava. Cassava, also known as yuca, has been a staple food for many South American and Caribbean cultures for centuries. The root of the cassava plant is harvested, dried and ground to a fine powder to create a pure flour. Cassava flour is gaining the attention of many Paleo followers as well as those with sensitivities to grains or nuts. It is high in carbohydrate and a good source of energy when eaten in balance with protein, fats and vegetables.

I was delighted to find that cassava flour tortillas were so easy to make. They are pliable enough to eat by hand with your favorite taco filling and they also hold up well in enchiladas such as my recipe for Green Chile Turkey Enchiladas.

Cassava flour is available in several brands but I use Otto’s Naturals. The recipe for the tortillas is right on the package and contains simply cassava flour, salt, oil and water. I use Avocado Oil for a mild flavor that is very similar to flour tortillas.

Now that we are able to enjoy tortillas once again, I am definitely asking Santa for a tortilla press this Christmas!
