Instant Pot and Slow Cooker Methods

Sweet & spicy grass-fed beef short ribs are a delicious family favorite when slow cooked or pressure cooked as the meat falls right off the bone. The addition of cilantro and green onions brighten the flavor while the crushed red chili pepper provides a little heat.

Served here with sautéed cauli-rice and braised chard from the garden, this meal is power packed with nutrients and a true comfort food.

Serves 2-3

Ingredients

  • 2 ½ to 3 lbs Beef Short Ribs, grass-fed or organic raised if possible
  • Kosher Salt & Black Pepper
  • Ghee, Bacon Fat or Lard
  • 1 cup Honey
  • ½ Cup Coconut Aminos
  • 1 Tbsp Sesame Oil
  • 4-5 Cloves of Garlic, finely chopped or pressed
  • 1 Tbsp Ginger, finely chopped, grated or prepared ginger paste
  • 1 Tbsp Fish Sauce
  • 1-2 tsp Crushed Red Pepper, adjust to your liking

Garnishments

  • 3 Green Onions, chopped
  • 2-3 Tbsp Cilantro, roughly chopped
  • Sesame Seeds

Instant Pot Method

  1. Pat ribs dry with a paper towel. Meat will brown best when dried.
  2. Generously season ribs with kosher salt and black pepper.
  3. Heat ghee, bacon fat reserved from previous cooking or lard using the “Saute” feature of the Instant Pot.
  4. Brown short ribs a few at a time on all sides. Be careful not to over crowd the ribs as they may not brown as nicely. Once browned, remove ribs from pot and transfer to a plate.
  5. Prepare the sauce by combining honey, coconut aminos, sesame oil, garlic, ginger, fish sauce and crushed red pepper. Whisk until honey is thoroughly dissolved.
  6. Return meat and any juice that has collected on the plate to the Instant Pot.
  7. Pour sauce over the meat. Place lid on Instant Pot in locked position. Select “Meat/Stew” setting and cook for 45 minutes.
  8. When cooking cycle is complete and pressure has been released, remove lid.
  9. Remove meat from Instant Pot. Poor sauce into a defatter cup to remove any excess oil or skim oil from the top of the sauce with a spoon.
  10. Serve meat with sauce and garnish with green onion, sesame seeds and chopped cilantro.

Slow Cooker Method

Prepare as above but place browned meat and sauce in a slow cooker or Crock-Pot. Cook on high for 6 hours.
