We love celebrating Friday nights at the Cunningham household! It’s the end of a productive and very busy week so I usually choose a dinner that can be prepared in advance and popped into the oven or one that I can quickly get on the the table to feed our crew. Friday Night Taco Casserole fits the bill either way.
This taco casserole is gluten free and made by layering sweet potatoes instead of tortillas but you can always substitute a grain free tortillas such as Siete Grain Free Tortillas. For the full paleo version, omit the cheese and add a cup of beef broth to the meat mixture for a little added moisture. Serve topped with sliced avocado, chopped green onions and salsa.
Ingredients
- 1 ½ lbs Ground Beef
- 1 Yellow Onion, chopped
- 1 clove Garlic, minced
- 1 lb Sweet Potato, peeled and thinly sliced
- 2 cups Spinach, roughly chopped
- 1 cup Mexican Blend Shredded Cheese
- Simply28 Taco Seasoning, see recipe below
- Olive or Avocado Oil
Instructions
- Preheat oven to 350°. Coat the bottom and all 4 sides of a 9x13” baking dish with olive or avocado oil.
- In a large skillet, heat oil over high heat. Add onions and sauté until translucent. Add the minced garlic and cook for about 1 minute more. Crumble the ground beef into the onion mixture and continue to break the meat up into small pieces with the edge of a wooden spatula. Add about half of the Simply28 Taco Seasoning mixture and continue cooking. When meat is thoroughly browned and cooked, taste and add more of the seasoning mix if desired.
- Spread the sweet potato slices in a single layer on the bottom of the baking dish forming the “crust”. Add a layer of ½ of the chopped spinach and ½ of the meat mixture over the sweet potatoes. Add the remaining spinach and then the remaining meat mixture. Sprinkle with Mexican blend cheese.
- Bake at 350° for 30-40 minutes until cheese is melted and bubbly and the potatoes pierce easily with a fork.
- Remove and let cool for 10 to 15 minutes before serving.
Simply28 Taco Seasoning
Unlike most commercial taco seasonings, Simply28 Taco Seasoning is gluten free and sugar free.
1 ½ tsp Kosher Salt
1 ½ tsp Paprika
1 ½ tsp Chili Powder
½ tsp Garlic Powder
½ tsp Onion Powder
½ tsp Oregano
½ tsp Cumin
Mix all ingredients in a small bowl and store for several months in a sealed container.
