Garnet yams are sweet and flavorful all on their own. They need very little help except a little butter and salt to bring out their naturally sweet flavor. Add a little crunch of honey buttered walnuts and you have a holiday dish that is so good it almost seems like dessert.
Ingredients
- 2 ½ to 3 pounds Garnet yams
- 1 ½ cups walnuts
- 8 tablespoons butter
- ½ cup honey
- Kosher or sea salt
Instructions
- Preheat oven to 350°. Butter a 12x12 baking dish.
- Place whole, unpeeled yams in a large pot. Cover with water and boil for about 45 minutes or until tender when pierced with a fork. Remove yams from the water and allow to cool and discard the water. Once cool enough to handle, peel the yams. Add the yams back to the pot and add 4 tablespoons of butter and a couple pinches of salt. Mash the yams to a smooth consistency. Transfer the yams to the buttered baking dish and set aside.
- For the topping, roughly chop the walnuts and then transfer to a bowl. Place 4 tablespoons of butter, ½ cup of honey and a pinch of salt in a microwave safe container. Heat for 15 to 30 seconds until butter melts. Whisk the butter & honey together and then stir into the nuts. Spread the nuts over the yams.
- Bake at 350° for 30 to 40 minutes until yams are heated through and nuts have lightly browned.
