Ingredients
2 pounds purple potatoes
1/4 cup extra virgin olive oil
1 tablespoon fresh lemon juice
2 cloves garlic, pressed or finely chopped
3 tablespoons chopped Italian parsley
Salt and freshly ground black pepper, to taste
Instructions
Rinse the purple potatoes thoroughly to remove any dirt. Place them in a large pot and cover with water. Bring the water to a boil over high heat, then reduce the heat to a gentle simmer. Cook the potatoes for 15-20 minutes, or until they are fork-tender. Be careful not to overcook them.
Remove the potatoes from the boiling water and set them aside to cool until they are just cool enough to handle (about 10-15 minutes).
While the potatoes are cooling, whisk together the extra virgin olive oil, lemon juice, and garlic in a small bowl. Season the mixture with salt and freshly ground black pepper to taste.
Once the potatoes are cool enough to handle, peel the skins and discard. Chop potatoes into rough chunks. In a large bowl, gently toss the potato pieces with the olive oil mixture until well coated.
Sprinkle the chopped Italian parsley over the potatoes and give them a final toss to combine.
