Some of my best recipes have been ones that I have created on the spot without much of a plan. Sometimes they are great and other times… well let’s just say you have to experiment sometimes to get to the really good stuff. This colorful version of Chinese Chicken Salad is nutrient dense and it was the bomb! I personally like it best when all of the ingredients are chopped and tossed so I get all of the flavors in each bite. Steve & I enjoyed it with a scoop of Calrose, Japanese style white rice.
Ingredients
- 4 cups Red or Green Cabbage, thinly sliced or shredded
- 2 Chicken Breasts
- 1 Avocado, diced
- ¼ cup Cilantro, chopped
- ¼ cup Almonds
- 1 Tbsp Sesame Seeds
- ½ tsp Dijon Mustard
- 3 Tbsp Seasoned Rice Vinegar
- ½ cup Avocado Oil
- 1 Tbsp Sesame Oil, optional
- ¼ tsp Chili Pepper Flakes
- Sea Salt & Pepper to taste
- Sprouts and carrot strips, optional
Instructions
- For the dressing, combine mustard, rice vinegar, avocado & sesame oils, chili pepper flakes and a pinch of sea salt in a mason jar. Secure lid and shake vigorously until well combined. Set aside.
- In a small pan, toast almonds over medium heat stirring constantly to prevent from burning. Spread toasted almonds on a paper towel to cool.
- Season chicken on both sides with salt, pepper & garlic powder. Grill over medium heat for about 4 minutes on each side until juices run clear when poked with a fork. Cover with foil and allow to rest while you prepare the salad.
- Slice cabbage in half and remove core by cutting a triangle shape around the core. Slice half of the cabbage in thin slices about 1/8” or use a food processor or mandolin to thinly slice. Store the other half of the cabbage for another meal. Place sliced cabbage in a large salad bowl.
- Add diced avocado and chopped cilantro to the cabbage. Drizzle with the dressing and toss well to combine. You will likely have left over dressing. Plate the salad on 2 plates.
- Slice the chicken and place on top or next to the salad.
- Garnish with toasted almonds and sesame seeds. Add sprouts and carrot ribbons if using.
