This Pumpkin Chili is one of the easiest paleo recipes to make! It can be cooked on the stove top or prepared ahead of time and then just let it simmer in the slow cooker all day!
Just imagine coming home to that delicious aroma and having dinner ready to serve on a cool fall night. It’s Whole30 approved but I have to admit, it’s great topped with a little sour cream or cheddar cream for those who tolerate dairy.
Ingredients
- 2 lbs Ground Beef
- 1 large Onion, chopped
- 5 to 6 Garlic Cloves, minced
- 2-10 oz cans Ro-Tel Diced Tomatoes & Green Chilies
- 1-14 oz can Pumpkin Puree
- 1 cup Beef or Chicken Bone Broth
- 1 Tablespoon Sea Salt
- 1 Tablespoon Chili Powder
- 1 ½ tsp Cocoa Powder
- 1 tsp Cinnamon
- 1 tsp Oregano
- 1 tsp Ground Cumin
- 1 tsp Smoked Paprika
- ½ tsp Black Pepper
- Avocado Oil for cooking
Instructions
Stove Top Directions
- Heat a large Dutch Oven over medium high heat and drizzle with avocado oil. Sauté chopped onion 2 to 3 minutes until translucent. Add the garlic and continue cooking about 1 minute more. Crumble the ground beef into the onion and garlic mixture and cook until well browned.
- While meat is browning, mix all of the seasonings and the cocoa powder in a small bowl. Once meat is browned, add the seasoning mixture, tomatoes, pumpkin and broth. Stir until well combined, reduce heat to low and cover. Allow to simmer for 1 hour. Remove the lid and allow to cook an additional 15 minutes to thicken.
- Serve with your choice of condiments including green onions, avocado, cilantro or shredded lettuce. Cultured sour cream and aged shredded cheddar cheese are also good toppings if dairy products are well tolerated.
