Chocolate Covered Strawberries

Ingredients
- 16 oz Fresh Strawberries with stems
- 16 oz Semi-sweet Chocolate Chips, I prefer Ghirardelli
- 1 tsp Avocado Oil or Coconut Oil
Instructions
- Heating chocolate is best over a double boiler to prevent chocolate from burning. The added oil provides a nice texture when you bite into the strawberries and prevents the chocolate from crumbling.
- Fill the larger pan of a double boiler with water high enough so that the smaller pan can rest inside making contact with the water. Bring the water to a boil. Add chocolate chips and the oil to the smaller pan and place over boiling water. Stirring constantly cook for 1 to 2 minutes until chocolate chips are fully melted. Remove from heat immediately.
- Holding the stem of each strawberry, dip in to the chocolate chip and then place on wax paper. Allow to cool and enjoy! Chocolate Dipped Strawberries can be made several hours in advance. They are best enjoyed the same day but can be refrigerated overnight.
